Vegan Wellington Recipe

The wellington sirloin is a perfect recipe for a main course whose origin has a certain mystery. Some say that filet de boeuf en croute (loin wrapped in puff pastry) was a staple dish before Arthur Wellesley, 1st Duke of Wellington, brought this recipe to fame after his victory at the Battle of Waterloo. Although its origin is surrounded by legends, what is certain is the intensity of its flavor. In this case, the loin will be replaced by a filling made with different vegetables that will not leave anyone indifferent. This healthy dish is suitable for any occasion and can be accompanied by different sauces, purees or salads. The possibilities are endless!

Ingredients to make vegan Wellington:

  • 200 grams of mushrooms
  • 200 grams of cooked beans
  • 200 grams of carrots
  • 100 grams of natural tofu
  • 60 grams of celery
  • 1 onion
  • 50 grams of oat flakes
  • 3 tablespoons of fried tomato
  • 2 cloves of garlic
  • 2 teaspoons of oregano
  • 2 teaspoons soy sauce
  • 1 teaspoon herbs de Provence (can be oregano)
  • Olive oil
  • Sal
  • Pepper
  • 1 vegetable puff pastry
  • Vegetable milk

How to make vegan Wellington:

To get started with the vegan wellington recipe, you must first prepare the filling for this main dish. To do this, cook the vegetables: carrot, celery, garlic, onion and mushrooms, cut them to taste.

Tip: it is recommended to do it in small pieces so that the final texture is better.

Later, add the vegetables in a pan with a little oil and fry. Let cook over low heat until the vegetables are poached. Remove from heat.

In a food processor or blender, add the vegan tofu, beans, soy sauce, previously prepared vegetables, oat flakes, tomato and thyme, blend until smooth.

Tip: oat flakes can be substituted for oatmeal.

Place this dough in plastic wrap and roll it up like a cylinder. You can leave it in the plastic wrap itself or use a mold for it. Then chill in the fridge for at least an hour to make it easier to mold.

Tip: if you want a spicier touch add a teaspoon of paprika.

Lay out the vegan puff pastry and place the previously prepared filling in the middle and wrap it from one side of the puff pastry to the other very carefully so that it does not break.
