Homemade croquettes are a well-known starter in Spain and other countries and can be served as an appetizer, a tapa or snack, a side dish or a main dish. A croquette consists of a portion of dough of various ingredients linked with béchamel and empanadas. All kinds of fillings are used, almost always meat or fish, although the vegetable croquettes are delicious.
This recipe for vegetable croquettes that I share is vegan that is, the croquettes are prepared without eggs, without dairy products, and without meat. They are made from chard, carrot, pepper and onion with spices and pine nuts. Ingredients to make vegan vegetable croquettes:
- 1 bunch of Swiss chard
- 3 carrots
- 1 onion
- 1 teaspoon grated fresh ginger
- ½ teaspoon grated fresh turmeric
- 2 red bell peppers
- 1 handful of pine nuts
- 1 teaspoon curry powder
- ½ cup soy milk
- 4 tablespoons of wheat flour
- 1 teaspoon salt
- 1 pinch of black pepper
- 2 tablespoons of oil
- ½ cup of breadcrumbs
How to make vegan vegetable croquettes:
Cook the Swiss chard in boiling salted water for 5-7 minutes. Drain them well and reserve to continue with the recipe for vegan vegetable croquettes. Chop the onion, carrot and pepper and grind them in the food processor or cut them very finely. Heat a pot or pan with oil and fry the onion until it begins to turn transparent. Add the carrot and pepper and fry for another minute, stirring occasionally. Add the chard that we had reserved.
Cook the vegetables until they are soft and the ingredients of the vegan croquettes are integrated. Add the salt, pepper, curry and flour. Stir until the dough is thick. Pour the soy milk into the dough and add the pine nuts. Mix the vegetable croquette dough well until it is homogeneous, dense and manageable. Let the dough cool a bit.
Take small portions of dough with your hands and form oval croquettes. Pass each croquette through the breadcrumbs.
