Vegan Tofu Sandwich with Spinach and Mushrooms Recipe

Vegan sandwiches are a quick and easy option for breakfast, lunch, snacks and dinner. It is a dish that anyone likes since you can fill it with whatever you want. However, for a vegan sandwich to be a nutritious and healthy option, you must exclude some ingredients, for example, substitute cold cuts for tofu that does not contain saturated fat or cholesterol, use a low-fat and lactose-free cheese, add more fresh vegetables and green leafy vegetables such as spinach, and use whole wheat artisan bread. You will see that this healthy vegan tofu with spinach and mushroom sandwich is also delicious!

Ingredients to make Vegan Tofu Sandwich with Spinach and Mushrooms:

  • 2 whole-grain sandwich buns
  • 150 grams of tofu
  • 4 Chinese cabbage leaves
  • 1 tomato
  • 1 piece of vegan cheese
  • 1 bunch of spinach
  • 4 mushrooms
  • 2 cloves of garlic
  • 1 teaspoon of oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Vegan Tofu Snack with Spinach and Mushrooms:

Cut the mushrooms and garlic into slices. Heat a little oil in a frying pan and fry the garlic. Then add the mushrooms and spinach, season with salt and pepper and sauté the vegetables until soft. Cut the tomato into slices and the tofu into slices. Season the slices of tofu with salt and pepper and cook them on the grill on both sides so that they brown.

Cut the whole wheat bread lengthwise and cover the bottom with a piece of vegan cheese.  Heat the oven to a high temperature and gratin the bread with cheese so that it melts. On top of the bottom of the cheese bun, place the bok Choy leaves, tomato slices, tofu slices, and spinach and mushroom stir-fry. Cover the vegan tofu sandwich with the top of the bread and serve.
