Vegan Tacos al Pastor Recipe

When you hear the words “Mexico” and “food”, I assure you that the first thing that comes to mind is the word “tacos”, and of course! Who hasn’t heard of this famous dish?

In any part of the world you can prepare some type of Mexican taco having the basic ingredients that would be firstly, the corn tortilla and secondly any stew, meat or vegetable with which it can be filled. Tacos are normally filled with some animal protein, be it pork, beef or chicken, but this time we bring you a delicious idea to prepare delicious vegan  Mexican tacos, and as we know that the style of taco that most consumed is the taco al pastor, we will make them this way.

Ingredients to make Vegan Tacos al Pastor:

  • 3 cups of textured soy
  • 3 pieces of Chile pasilla
  • 3 pieces of guajillo chili
  • ½ cup of white vinegar
  • 5 bay leaves
  • 6 pieces of fat pepper
  • 5 pieces of clove
  • 2 cloves of garlic
  • 1 tablespoon Cumin
  • 1 piece of whole cinnamon
  • 1 piece of onion
  • 1 pinch of salt

How to make Vegan Tacos al Pastor:

To prepare these vegan tacos al pastor, the first thing to do is gather the ingredients that we will need as you can see in the following image. To begin with our preparation we will  hydrate our textured soybeans, for this we place it in a saucepan with boiling water, add a pinch of salt, the bay leaves and let it soften completely. This will take about 10 minutes on high heat.

Once ready, we remove it from the heat, let it cool down, and once it is cold, we squeeze it perfectly to remove the excess water that it might still contain and we reserve it for a moment. On the other hand, in the same way in very hot water we place the guajillo and pasilla chilies to soften.

Once the pasilla and guajillo chilies are soft, place them in the blender along with the vinegar, water, cinnamon, pepper, cumin, cloves, marjoram, garlic, half the onion and a pinch of salt, and blend until obtaining a homogeneous sauce for the soy al pastor tacos.

Once the sauce is ready, we add it by straining it over the soybeans, we integrate everything very well, ensuring that all the soybeans are impregnated with the sauce. Then we cover with plastic wrap and let it rest in the refrigerator for at least 4 hours.

Once this time has passed or more if you wish, we take a little chopped onion and let it fry in a pan with hot oil. Once the onion is ready, add the textured soy and let it cool until it is well cooked, you can also add pieces of pineapple, so that the soy has more of a shepherd’s flavor. Once the filling is ready, we take the corn tortillas and form the vegan  Mexican tacos, adding a little chopped pineapple and accompanying with a little chopped cilantro or your favorite sauce, and READY! Now we can enjoy these exquisite vegan tacos al pastor.
