Vegan Spaghetti Bolognese Recipe

This vegan tofu pasta Bolognese recipe is perfect for those who are bored of the same old sauces. Although this recipe for spaghetti with tofu and tomato is based on the traditional Bolognese sauce recipe, instead of minced meat I have used tofu, a cholesterol-free vegetable protein source, which will give the dish a different flavor and texture. Ingredients to make Vegan Spaghetti Bolognese:

  • 240 grams of whole meal Spaghetti
  • 3 garlic cloves
  • 1 onion
  • 1 teaspoon of Oil
  • 1 carrot
  • 1 green pepper
  • 4 tomatoes
  • ½ teaspoon of Salt
  • 1 piece of fresh ginger of 1 cm
  • 2 cups frozen mixed vegetables
  • 200 grams of Tofu
  • 1 tablespoon of brown sugar

How to make Vegan Spaghetti Bolognese:

  1. To prepare this pasta with vegetables and tofu, the first thing to do is cook the pastauntil “al dente” in salted water for 10-12 minutes following the instructions on the package.
  2. Drain the whole wheat spaghetti and reserve.
  3. Tip:You can use pasta that is not whole wheat to make this spaghetti with tofu and tomato if you prefer.
  4. Says the onion, carrot and bell pepper. Crush 2 garlic cloves or chop them very finely and cut another clove into slices.
  5. Blanch the tomatoes and blend them in the blender. Peel and grate the piece of fresh ginger root. Mash the tofu with a fork or mash it in the blender until it becomes crumbs.
  6. Heat a pan with a little oil and fry the chopped Add the crushed or finely chopped garlic and cook for an the half minute.
  7. Add the diced carrot and bell pepper to the pan and continue cooking until the vegetables begin to soften.
  8. Then add the crushed tomatoes, ginger, sugar and salt, stir and cook over medium heat stirring occasionally until the tomato paste sauce is reduced a bit.
  9. While the tofu pasta sauce is cooking, sauté the vegetables with a clove of garlic and a little salt.
  10. You can use any frozen vegetable mix for ease. I have used green beans, carrots, artichokes, peas and broad beans.
  11. Add the reserved pastato the pan with the stir fry and mix well.
  12. When the tomato sauce is reduced adds the tofu and cooks another 8-10 minutes.
  13. Place the pasta with vegetables on plates and serve with the tofu pasta sauce on top.
  14. And you can enjoy this vegan spaghetti Bolognese!
