Vegan Soy Nuggets Recipe

Yuba or soy skin is a soy-based product widely used in Asian cuisine and a very common ingredient in the preparation of vegan and vegetarian recipes to replace chicken thanks to its texture. You can buy Yuba at any Asian and Oriental food supermarket. To prepare some vegan chicken-flavored soy nuggets that this time I bring, we are going to use several condiments, for example, vegan chicken seasoning, soy sauce and liquid smoke.

Ingredients to make Vegan Soy Nuggets:

  • 150 grams of dried Yuba
  • 500 milliliters of vegetable broth
  • 2 tablespoons of cornstarch
  • 1 tablespoon of vegan chicken flavor spices (seasoning)
  • 1 tablespoon of lemon juice
  • 1 tablespoon liquid smoke
  • 2 tablespoons of soy sauce
  • ½ cup of breadcrumbs
  • oil for frying

How to make Vegan Soy Nuggets:

1.Soak the Yuba in the warm vegetable broth for 2 hours so that it hydrates well. After the soaking time, drain it well, squeezing with your hands to remove all the liquid. You can also put it inside a clean kitchen towel and drain by squeezing well.

2.Put the well-drained Yuba in the blender glass and blend until it is in small pieces. If it releases water, drain it again.

3.In a bowl, mix the Yuba with the chicken seasoning, the lemon juice, the soy sauce and the liquid smoke. Add the cornstarch and stir well.

4.Take small portions with your hands and form some soy nuggets pressing very hard so that they stick well.

5.Pass the vegetarian nuggets through the breadcrumbs until they are completely coated.
