Vegan Russian Salad Recipe

The Russian salad is one of the best known tapas. It is a mixture of vegetables and other ingredients seasoned with mayonnaise. Ingredients vary from country to country and region to region, but the main components are usually cooked potatoes and carrots, pickles, peas, and other vegetables. The Russian salad can be prepared vegan and is exquisite. Keep reading the recipe that I share to find out how to make vegan Russian salad and, also, homemade vegan mayonnaise made with soy milk.

Ingredients to make vegan Russian salad:

  • 4 potatoes
  • 2 carrots
  • ½ cup of peas
  • 3 pickles
  • ½ cucumber
  • 1 teaspoon salt
  • ½ cup vegetable oil
  • ¼ cup soy milk
  • 1 teaspoon vinegar

How to make vegan Russian salad:

Cook the potatoes and carrots in boiling water until soft. Let them cool and cut them into small cubes. Peel the cucumber and cut it together with the pickles into small cubes. Mix all the vegetables in a large bowl to continue with the recipe for vegan Russian salad.

To make the vegan mayonnaise, pour the soy milk, oil, vinegar and salt into the blender glass and beat the ingredients until emulsified and a creamy mayonnaise is assembled. Add the vegan mayonnaise to the bowl with the vegetables, season with salt and pepper and mix well.
