Vegan Quinoa Salad Recipe

Ingredients to make Vegan Quinoa Salad:

  1. ½ cup of quinoa
  2. 1 small carrot grated
  3. ½ zucchini sliced
  4. ½ onion, chopped
  5. 3 garlic cloves, minced
  6. ½ cup of chopped mushrooms
  7. 2 tablespoons of olive oil
  8. 1 pinch of black pepper
  9. 1 pinch of salt
  10. sunflower seeds
  11. Poppy seeds
  12. Other seeds (optional)
  13. 1 cup of water (240 milliliters)

How to make Vegan Quinoa Salad:

  • Cook the quinoa to start. Wash it very well with warm water and place it in a saucepan.
  • Add 1 cup of water and a pinch of salt and cook the quinoa for 15 minutes, or until the grains are soft. Then drain it and reserve.
  • Trick: How to cook quinoa? In the same way as rice but in this case, the proportion is 1 cup of quinoa to 2 cups of water.
  • Meanwhile, place the olive oil in a pan and sauté the onion and garlic over medium-low heat. Once the onion is soft, add the carrot and zucchini and mix everything well.
  • Once the squash is soft, add the mushrooms and cook for a further 2-3 minutes, stirring occasionally. Season with salt and pepper to taste, and finally add the cooked quinoa and mix all the original vegan salad.
  • Tip: If it is a little dry you can add a little more olive oil.
  • Serve the quinoa and vegetable salad by sprinkling the various seeds on top. Keep in mind that you can eat this vegan quinoa salad hot, warm or cold, so it doesn’t matter if you prepare it in advance or at the moment.
