Vegan Potato Macaroni and Cheese Recipe

Macaroni and cheese or the famous mac ‘n’ cheese are a casserole, whose main ingredients are macaroni and cheddar or other cheese sauce. It is usually a very caloric dish and rich in fats. However, there is a delicious way to cook this dish without any animal ingredients using vegetables, such as potatoes and carrots, and brewer’s yeast and paprika to flavor cheese: vegan macaroni and cheese that I share this time.

Ingredients to make Vegan Potato Macaroni and Cheese:

  • 2 boiled potatoes
  • 2 cooked carrots
  • 4 tablespoons brewer’s yeast
  • 1 teaspoon of turmeric
  • 1 tablespoon tapioca (or corn) starch
  • 1 tablespoon vegetable margarine
  • 1 teaspoon salt
  • 400 grams of macaroni
  • ½ teaspoon smoked paprika
  • 1 cup vegetable broth

How to make Vegan Potato Macaroni and Cheese:

  1. Cook the macaroniin salted water following the package instructions until al dente. Drain them and reserve.
  2. Cook the potatoes and carrots until soft.
  3. Peel the potatoes and the carrot, chop them and place them in the blender together with the brewer’s yeast, salt, paprika and turmeric.
  4. Gradually add the broth and blend all the ingredientsuntil a smooth and homogeneous cream is formed.
  5. Check the texture of the vegan cheese sauce so that it is not too runny or too thick.
  6. Pour the vegan pasta sauce into a saucepan and heat it together with the margarine.
  7.  When the mixture is hot, add the tapioca starch diluted in a little cold vegetable broth and stir until it starts to boil.
  8. Lower the heat and stir to thicken the mixture a bit.
  9. Place the macaroni on a cookiesheet or large container. Pour the vegan potato and carrot cheese on top and distribute it well.
  10. Preheat the oven and bake the macaroni at 180 degrees for 20 minutes. As an option you can sprinkle some grated vegan cheese before baking.
  11. When the vegan macaroni and cheeseis ready, cut into portions and serve.
