Vegan oat bars recipe

Ingredients to make vegan oat bars:

  • 2 cups of oat flakes
  • 1½ cups of brown sugar (270 grams)
  • 2 cups of Flour (280 grams)
  • 2 teaspoons of Bicarbonate
  • 170 grams of vegetable butter
  • 1 pinch of Nutmeg
  • For the filling
  • 250 grams of Quince

How to make vegan oat bars:

  1. In a bowl we put the flour with the oats and the baking soda, mix well and reserve.
  2. In another bowl, work the butter with the sugar until the color of the sugar lightens a bit. At that moment we add the dry ingredients and knead with our hands.
  3. As we knead, we will see that the mass of the oat bars is not of a homogeneous consistency, but lumpy.
  4. Grease a 20 cm by 40 cm rectangular mold well and put a layer of the previous mixture, flatten it a little and put the quince jelly covering the entire mixture.
  5. Place the rest of the dough on the quince and crush a little to make it compact. Bake the oatmeal dough with quince for 30 minutes at 200ºC, or until we see that it is golden.
  6. When ready, remove it from the oven and let it cool. Then, we cut squares and serve the oat bars. They are ideal both for breakfast and for a snack, accompanied by a natural orange juice
