Vegan Moorish Tempeh Skewers Recipe

The Moorish skewers are a famous recipe of Moroccan origin that consists of pieces of marinated meat pierced on metal or wooden rods and cooked on the grill. They are usually lamb, but they are usually prepared with any type of meat and why not vegetable meat.  That is why I have prepared these vegan tempeh skewers to share. Tempeh is a food made from fermented soybeans that is used in vegan cuisine as a substitute for animal protein. The secret of the Moorish vegan pinchitos consists in their marinade, therefore, we are going to marinate the tempeh in a combination of spices that will give an authentic flavor to these easy vegan tapas.

Ingredients to make Vegan Moorish Tempeh Skewers:

  • 500 grams of tempeh
  • 2 carrots
  • 1 onion
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon of turmeric
  • 1 teaspoon of oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander seeds
  • ¼ teaspoon black pepper
  • 2 nails
  • ½ star anise
  • 1 chili pepper
  • 1 splash of vegetable oil

How to make Vegan Moorish Tempeh Skewers:

Combine all the spices in a mortar and crush them until they are well integrated. You can also grind them in a food processor. In a large bowl, mix a good splash of oil and the spices.

Cut the tempeh into medium-large pieces, chop the onion and carrot and put them in the bowl with the marinade. Stir well so that everything is covered with the spices, cover the bowl with a piece of cling film and put it in the fridge for several hours. Stick the pieces of tempeh, onion and carrot on the wooden or metal rods and cook the vegan Moorish skewers on the barbecue, pan or griddle over high heat so that they cook well.
