  • 1 cup of lentils
  • 1 large onion
  • 2 branches of green onion
  • ¼ bell pepper
  • 1 teaspoon of oil
  • 1 teaspoon of turmeric
  • 1 teaspoon cumin
  • 1 pinch of ground chili
  • 1 tablespoon garam masala
  • 25 cubic centimeters of white wine
  • 6 empanada disks

How to make Vegan Lentil Empanadas:

To get started with this vegan lentil empanadas recipe, first cook the lentils in plenty of  boiling water for 30 minutes. With the help of a strainer, remove the cooking water and reserve the lentils while they cool. On the other hand, peel and chop the onion, wash and chop the bell pepper and, also, do the same procedure with the green one, wash it and chop it, separating the green part from the white. Sauté the white onion with 1 teaspoon of oil in a skillet over high heat until translucent. Add the bell pepper and green. When it’s drying, lower the heat to medium and add 1 tablespoon of water. Repeat as many times as you want, since the more times you do this step, the sweeter they will be. The last time, replace the water with the wine, turning the heat up to maximum.

Tip: Make sure the vegetable stir-fry is left with some liquid to make your filling moister.

When the alcohol has evaporated, mix the vegetables with the lentils and make two or three touches with the minipimer so that a pastier filling is formed. Store it to cool, ideally one night like this it will take on more flavor. It’s time to prepare your lentil empanadas. First, turn on the oven to preheat to maximum temperature. Then, place a generous tablespoon of filling in the middle of the empanada disk and moisten half the edge so that it sticks better. Close them with the help of a fork or repulgues.

Take your vegan lentil dumplings to a roasting pan, previously greased with oil and with the seam facing up. Cook them for about 15 minutes in the preheated oven until the dough is golden brown, since the filling is cooked.
