Vegan Lentil Curry Recipe

Ingredients to make Vegan Curried Lentils:

  • 1 cup of lentils
  • 2½ cups of water (600 milliliters)
  • 1 bay leaf
  • 1 chopped seedless tomato
  • ½ onion, chopped
  • 2 tablespoons of olive oil
  • 1 dessert spoon of curry powder
  • Salt to taste

How to make Vegan Curried Lentils:

1.Wash and drain the lentils and then put them in a saucepan with the water and the bay leaf.

2.Let the lentils cook over medium heat until soft, but not longer than 30 minutes. Then turn off the heat and reserve as they are.

3.In another container, prepare the vegetarian lentil curry sauce: sauté the onion in a pot with the olive oil. Add the chopped tomatoes and fry all the vegetables until they start to brown.

4.Then add the reserved lentils with the cooking water and everything.

5.Lastly, add the curry powder and salt to taste.

6.Using a wooden spoon or ladle, mash some of the lentils with the curried vegetables to help the broth thicken. Let the stew simmer for a while, stirring occasionally. When it forms into a thick sauce, it will be the right time to stop cooking.

7.Serve the vegan lentil curry with jasmine rice or basmati rice for example. I hope you like it!
