Vegan Hummus Sandwich Recipe

Homemade vegan hummus is a delicious and healthy way to eat legumes and a great trick for adding plant-based protein to your diet. You can prepare a simple chickpea hummus or add an extra ingredient to give it a touch of color and different flavor. To prepare this vegan hummus sandwich, for example, I have added watercress to the classic recipe and it has been exquisite. You’ll see when you try it!

Ingredients to make Vegan Hummus Sandwich:

  • 4 slices of multigrain sandwich bread
  • ½ cucumber
  • 1 cup of watercress
  • ½ cup of cooked chickpeas
  • ½ lemon (juice)
  • ½ teaspoon of salt
  • ½ teaspoon cumin
  • 1 teaspoon of tahini

How to make Vegan Hummus Sandwich:

Put all the ingredients for the homemade hummus in the blender: the chickpeas, the tahini, the salt, the pepper, the cumin, the lemon juice and the washed watercress. Reserve half a handful of watercress leaves to serve with the vegan sandwich. Blend all ingredients until a smooth, homogeneous paste is formed.

Tip: If the hummus is a bit dry, add a little oil.

Toast the slices of bread. Spread two of them with the watercress hummus, place the cucumber slices on top and some watercress leaves that we had reserved. Top the Hummus Veggie Sandwich with the remaining two slices and serve. You can use avocado instead of watercress and make a vegan hummus sandwich with chickpeas and avocado if you like it better. Take advantage!
