Fideuá is a dish that is made in a very similar way to paella, but its main ingredient is noodles. Traditionally, fish, fish and shellfish broth are used as other ingredients, but I have prepared this recipe for vegan fideuá with lots of vegetables and vegetable broth that add the entire flavor to the dish. I have also added vegetable meat that simulates fish, but you can add seaman or tofu if you prefer.
Ingredients to make vegan Fideuá:
- 400 grams of fideuá noodles
- 1½ liters of vegetable broth
- 1 onion
- 2 artichokes
- 1 pepper
- ½ cup of peas
- ½ zucchini
- ½ eggplant
- 2 carrots
- 2 tomatoes
- 4 garlic cloves
- 1 tablespoon sweet paprika
- 1 teaspoon of turmeric
- 150 grams of vegetable meat, seaman or tofu
- 2 tablespoons olive oil
- 1 teaspoon salt
How to make vegan Fideuá:
- In a large peeler or frying pan, heat the oil and fry the chopped onion and garlicuntil the onion begins to turn transparent.
- Add the carrot and pepper cut into small pieces and the artichoke cut into quarters.
- Cook the vegetables stirring occasionally for a few minutes and add the peas, aborigine and zucchini cut into small pieces, stir and cook for several more minutes.
- Then add the diced tomatoesand the vegetable meat or seaman and cook for another minute.
- Add the noodles to the pan or skillet and sauté them for 2 minutes, stirring.
- Add the vegetable broth and the spices cover the pan and cook the vegetarian fideuá for another 10 minutes.
- Turn off the heat and let the vegetable fideuá rest with the lid on for 20 minutes. Sprinkle a little paprika on top and serve the freshly made vegan fideuá.
