This cooked chickpea cheese that I share is a good substitute for traditional cheese, it is healthy and totally vegan. Chickpeas are legumes rich in vegetable protein and slow-absorbing carbohydrates; therefore, it is a perfect vegan chickpea cheese for athletes and also for people with diabetes. You can use it as a spread on a sandwich or sandwich, on pasta dishes or as a gratin in the oven.
Ingredients to make Vegan Chickpea Cheese:
- 1 cup of chickpeas
- ½ unit of onion
- 2 cloves of garlic
- 2 tablespoons of brewer’s yeast
- 1 tablespoon of oil
- 1 teaspoon salt
- 2 cups of water (480 milliliters)
How to make Vegan Chickpea Cheese:
1.Soak the chickpeas at least 8 hours before preparation.
2.Drain the chickpeas and put them in the blender jar along with the other ingredients: the brewer’s yeast, the salt, the water, the oil, the garlic and the chopped onion. Blend well until a homogeneous mixture without chunks is formed.
3.Pour the soy-free vegan cheese mixture into a pot and heat it over medium heat, stirring continuously. Stir until the mixture thickens and has the consistency of thick mashed potatoes.
4.Pour the mixture into a round mold and let the chickpea cheese cool in the fridge to harden.
5.Serve the vegan chickpea cheese with toast, in sandwiches, sandwiches, etc.
