Vegan Cauliflower Tacos Recipe

Tacos are one of the most representative dishes of Mexican cuisine. It is a corn or wheat flour tortilla filled with practically anything that comes to mind. Today tacos are known worldwide as a type of fast food, since they are made at the moment and filled with simple ingredients or quick preparations. This recipe that I share is the homemade, simple and vegan version of a recipe that mixes Mexican and American cultures. It is a taco stuffed with the famous Buffalo-style vegan cauliflower chicken wings with a traditional spicy sauce.

Ingredients to make Vegan Cauliflower Tacos:

  • 6 wheat or corn tortillas
  • 1 cauliflower
  • 2 tablespoons of olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 cup vegan Buffalo sauce
  • 3 lettuce leaves
  • ½ bunch of arugula
  • 1 avocado
  • ½ cucumber
  • ½ bunch of coriander

How to make Vegan Cauliflower Tacos:

Separate the cauliflower into florets and place it in a bowl to start preparing the filling for the vegan cauliflower tacos. Add the olive oil, garlic powder, chili powder, pepper and half of the sauce to the bowl of cauliflower. Mix well so that the cauliflower is impregnated with all these flavors. Line a baking tray with parchment paper and place the cauliflower on top. Preheat the oven to 180ºC and bake the cauliflower for 20 minutes. Heat the rest of the Buffalo sauce and when the cauliflower is ready transfer it back to the bowl and cover it with the remaining sauce. In this way, we will obtain a vegan alternative to the famous Buffalo chicken wings and we will be able to fill the vegan cauliflower tacos.

To assemble the vegan tacos, first cut the avocado and cucumber into medium pieces.  Chop lettuce and cilantro. Fill each tortilla with lettuce and arugula, place the pieces of avocado and cucumber and several florets of cauliflower we bake. Decorate with cilantro and fill the other tortillas. Place the tortillas one on top of the other and serve the vegan cauliflower tacos. Without a doubt, this is one of those perfect recipes for when we don’t have much time to cook or to serve unexpected visitors.
