Vegan Cauliflower Rice Recipe

In addition, cauliflower is an inexpensive vegetable, rich in nutrients, minerals, and antioxidants. Ingredients to make Vegan Cauliflower Rice:

  • 1 medium cauliflower
  • 2 tablespoons of olive oil
  • ½ cup finely chopped onion
  • 2 cups frozen or canned mixed vegetables
  • 1 pinch of salt (to taste)
  • 1 pinch of pepper (to taste)

How to make vegan cauliflower rice:

Discard all leaves and stems. Also, remove the dark parts of the cauliflower with the knife, then chop 4 parts. Lastly, trim small florets. Booking.

Put the chopped cauliflower in a colander. Wash the vegetable flowers under the tap. Then, you must dry the florets very well. You can use absorbent paper or a clean, dry towel. It is very important that they are well dry, otherwise when processed they will become a puree.

Use a food processor to chop the cauliflower. Crush until you get very small grains that look similar to rice. If you don’t have a processor or blender, you can grate the vegetable. Reserve the cauliflower rice. Wash and chop the onion into very small cubes. Booking.

In a preferably non-stick frying pan, pour the oil and turn on medium-low heat. When the oil is a little hot, add the onion and cook until it looks translucent. Allow about 2 minutes to achieve this look. Stir constantly so it doesn’t burn.

Add the cauliflower rice in the pan and now cook over medium heat. Wait 2 minutes while stirring. Then, lower the heat, cover and cook for 8 more minutes.

Tip: For this recipe you can use coconut or olive oil.

Finally, uncover the pan and add the vegetables, mix very well until they are completely integrated into the cauliflower rice. Salt and pepper to taste. Cook for 5 more minutes without stopping stirring.

Trick: You can also prepare vegetables at home, steamed or boiled.
