Vegan Artichoke Cream Recipe

Ingredients to make vegan artichoke cream:

  1. 3 units of large artichokes
  2. 1 unit of white onion
  3. 3 units of Potatoes or potatoes
  4. 100 grams of leek onion
  5. 500 milliliters of vegetable broth
  6. 1 pinch of garlic paste
  7. 1 pinch of salt
  8. 1 pinch of black pepper
  9. 1 glass of white wine
  10. 120 grams of almond milk cream

How to make vegan artichoke cream:

  • The first step is to pre-list the ingredients for the artichoke cream.
  • Take the artichokes to a pressure cooker and add a pinch of salt, cook them for approximately 30 minutes or until they are soft. Reserve.
  • Very carefully remove the leaves that wrap the hearts of the artichokes, with this we are going to make the vegan cream.
  • Peel the potatoes or potatoes and cut them into medium squares, take them to a deep pot, pour water to cover and cook until soft. Reserve them.
  • Take another pot over medium heat, add a little olive oil, the white onion in large squares and the leek onion. Sauté for a few minutes.
  • Add salt, garlic paste and black pepper to taste.
  • You must choose very well the artichoke leaves that we are going to use for the vegan cream, the idea is to use those that are further inside the center of the hearts of the vegetable. Add the leaves to the pot where we have our onions.
  • Add the vegetable broth and again salt and black pepper to taste. Let cook for a few minutes and remove from heat.
  • Add the base of the artichoke cream and the cooked potatoes in a bowl, process the ingredients very well until they are integrated.
  • Add the vegan cream to the pot and add the white wine, let it conserve for 10 minutes over low heat and it will be ready to serve.
  • Serve the vegan artichoke cream adding the almond cream cheese, you can get this ingredient in specialized stores, what it does is replace the normal milk cream, since it is made with almonds.
