Ingredients to make Beef Consommé:
- 350 grams of beef
- 2 medium carrots
- 2 stalks of celery
- 2 small leeks
- 2 medium tomatoes
- 3 egg whites
- 1 1/2 liters of beef broth
- Salt
- Pepper
- 1 additional medium carrot cut into strips
- very fine
- 1 additional small leek, very thinly sliced
How to make Beef Consommé:
- Remove excess fat from the meat and cut it very small or pass it through the grinder.
- Chop the carrots, celery and leeks, put them in a large saucepan with the tomato, meat and egg whites and mix well.
- Heat the broth until lukewarm and season to taste, add the broth little by little to the meat and vegetables while stirring over moderate heat.
- Continue stirring for about 10 minutes, until the mixture comes to a slow boil.
- Reduce heat, then poke a hole in the layer of fat floating on top of the broth with a large spoon. Simmer uncovered for 35 minutes, do not stir.
- Place a damp cloth in the mouth of a large colander, strain the liquid and transfer it to a clean pot, taste the consommé and add more salt to taste.
- Reheat and serve decorated with very thin strips of carrot and leek.
