Veal consommé recipe

Ingredients to make Beef Consommé:

  • 350 grams of beef
  • 2 medium carrots
  • 2 stalks of celery
  • 2 small leeks
  • 2 medium tomatoes
  • 3 egg whites
  • 1 1/2 liters of beef broth
  • Salt
  • Pepper
  • 1 additional medium carrot cut into strips
  • very fine
  • 1 additional small leek, very thinly sliced

How to make Beef Consommé:

  1. Remove excess fat from the meat and cut it very small or pass it through the grinder.
  2. Chop the carrots, celery and leeks, put them in a large saucepan with the tomato, meat and egg whites and mix well.
  3. Heat the broth until lukewarm and season to taste, add the broth little by little to the meat and vegetables while stirring over moderate heat.
  4. Continue stirring for about 10 minutes, until the mixture comes to a slow boil.
  5. Reduce heat, then poke a hole in the layer of fat floating on top of the broth with a large spoon. Simmer uncovered for 35 minutes, do not stir.
  6. Place a damp cloth in the mouth of a large colander, strain the liquid and transfer it to a clean pot, taste the consommé and add more salt to taste.
  7. Reheat and serve decorated with very thin strips of carrot and leek.
