How to make Boiled Valencian:
To make the Valencian boil, clean all the vegetables. To do this, start by removing the ends of the beans and the strings from the sides, cut them and leave them in a bowl of water. Peel the potatoes and put them in the bowl with the beans.
Peel the onions and make a cross cut in the top of the onion. Peel the carrots, cut them in half lengthwise and widthwise. Add both ingredients to the bowl of water. We put them in the bowl with water. Wash all the vegetables well and drain them.
Heat a saucepan with water and a handful of salt and when it starts to boil add the vegetables, but not all at once. First, add the green beans so they retain their color, when it starts to boil again add the carrots and after about 5 minutes add the rest of the vegetables, that is, the potatoes and onions. They must be covered with just enough water. Cook the vegetables for 25-30 minutes, check that the potatoes and carrots are cooked and see if you need to add a few more minutes. When they are soft, turn off the heat.
Trick: if you make the Valencian boil in an express pot, the cooking time will be reduced by half.
Separately, cook the eggs in water for 10 minutes over medium-high heat. Take them out and let them cool just enough to peel them. In this video we teach you how to cook perfect eggs.
