  1. First of all, get ready and prepare all the ingredients for this Valencia style rice. Then, wash the clams very well by soaking them in cold salted water, cut all the vegetables finely and devein the shrimp. The tomato must be skinless and seedless.
  2. Add some water in a pot and place all the clams inside. Take to the fire and let it boil for about 3 minutes to cook the clams. When they are ready, pass through a strainer and reserve the cooked clams and the broth separately.
  3. On the other hand, season all the chicken pieces with the lemon, salt and pepper game.
  4. To cook this Valencia style rice it is best to use a paellera, if you don’t have it you can use any pot, preferably low cut.
  5. Heat oil and brown the chicken on all sides, when it is done, add the squid and sauté everything together for 3 minutes. After this time, withdraw and reserve.
  6. In the same pan, without washing and with the rest of the oil from the previous cooking, fry the green beans together with the tomato and the peppers, all this over medium heat.
  7. When the peppers look soft, add the chicken and squid back to the preparation.
  8. Now it’s time to add the broth, the total amount of liquid should be 3 and a half cups, so we must add the three cups of broth from the list of ingredients plus half a cup of broth from the clams. Add this to the sauce and season to taste with saffron and a point of salt.
  9. You can use chicken broth or if you prefer vegetable broth, homemade or ready-made.
  10. Keep the rice cooking at the valence over high heat until it comes to a boil? Then, add the rice and stir everything well so that it is impregnated with the flavors.
  11. Wait for it to boil again and cook for 5 minutes. After this time, lower the heat to a minimum and continue cooking for 20 minutes.
  12. Check that the rice is cooked as all the broth is consumed. When there are 2 minutes left to be ready, stir gently so that everything is mixed well, add the peas along with the clams and remove the pot from the heat.
  13. Cover everything with aluminum foil and let it rest for 5 minutes before serving.
