Typical Castilian Soup Recipe

Ingredients to make typical Castilian Soup:

  1. 5 cloves of garlic
  2. 1 teaspoon of ground chili
  3. 1 teaspoon of sweet paprika
  4. 1 liter of water
  5. 150 grams of old bread
  6. 2 Eggs
  7. 3 tablespoons of olive oil
  8. 1 pinch of salt and pepper

How to make typical Castilian Soup:

  • Get the ingredients ready to prepare our garlic soup. Keep in mind that the amount of egg depends on the number of guests, one per person is the correct measure.
  • Peel and slice the garlic. If you want the flavor not to be so intense or that the garlic does not repeat itself, I recommend removing the central trunk of each clove.
  • Blanch the garlic in olive oil. This process is also done to slightly reduce the strong flavor of the garlic.
  • To blanch the garlic, place it in a saucepan with cold water and bring to a boil. When it breaks the boil, remove from heat and strain all the water.
  • Separately, cut the bread into thin slices and toast it. Remember that for this type of soup it is better to use old bread or bread from the day before, although if you don’t have any, don’t worry, you can use fresh but well-toasted bread.
  • Next, add the bread and the ground chili to the saucepan with the garlic. Spice with salt and pepper. Mingle.
  • Incorporate the water.
  • Add the sweet paprika. The condiments that are used in the preparation of this homemade Castilian soup are to taste, add more or less and check the seasoning until it is to your liking.
  • Cover the soup and let it cook for about 20 minutes.
  • Serve the traditional Castellan soup piping hot and add an egg to each individual bowl so that it cooks with the heat of the soup… enjoy!
