During the Lenten season I wanted to improvise a bit with typical ingredients that are consumed on this special vigil date. Thinking about this, I made some tuna pancakes, which were perfect for the Easter menu.
Tuna is a protein with many benefits, such as its high content of omega 3 fatty acids and DHA-EPA fats. These fats prevent cardiovascular diseases, helping to have a healthy heart and taking care of the brain. Ingredients to make Tuna Pancakes:
- 2 cans of Tuna
- 4 medium cooked potatoes
- 1 egg
- 1 white onion
- 1 clove garlic
- 1 tablespoon fresh Cilantro
- 1 pinch of salt
- 1 pinch of black pepper
- 100 grams of Panko
- 4 teaspoons of olive oil
How to make Tuna Pancakes:
- The first thing you should do is prepare the ingredients to make the tuna and potato pancakes.
- In a food processor add the canned tuna and the cooked potatoes. Process until the ingredients are integrated and a thick paste is formed.
- Ideally. It is like a mashed potato and prickly pear with a smooth and homogeneous texture.
- Add the finely chopped white onion, the garlic clove of garlic paste to taste, salt and black pepper. Correct flavor and, if you wish, add a little more of some other ingredient. Mix the dough for our tuna pancakes well.
- Take the eggs to a deep plate and beat as if you were going to make an omelet.
- In another deep plate add the panko to proceed to coat the tuna tortillas. Remember that if you don’t have panko you can use bread crumbs or breadcrumbs.
- Finally, add the finely chopped fresh cilantro and the beaten eggs to the tuna pancake batter and mix the ingredients of our Lenten recipe well.
- With your hand, form small balls and then flatten them so that they take a circular shape. Then, pass the tuna and potato pancakes through the panko or bread crumbs on both sides. Repeat this operation until you finish all the dough for the tuna tortillas. Bring a frying pan over medium heat and add a tablespoon of olive oil, once it is hot, add the homemade pancakes and let them brown on both sides for approximately 3-5 minutes. When they are ready, remove them and reserve them on a plate with absorbent paper to remove excess fat. If you do not want to fry them, you can put them on a baking sheet with a little olive oil and bake them at 180ºC for 15-20 minutes.
- Serve the tuna pancakes accompanying them with lemon rinds or homemade tartar sauce. You will surely surprise your whole family with this recipe! In addition, it is a very fun way to get the little ones at home to eat fish.
