Tuna croquettes with potato recipe

Ingredients to make tuna croquettes with potatoes:

  • 1 can of tuna
  • 3 units of cooked potato (made puree)
  • 2 units of Egg
  • 1 unit of Lemon (juice)
  • 1 dessert spoon of parsley
  • 1 pinch of salt and pepper
  • 1 cup of breadcrumbs

How to make Tuna Potato Croquettes:

Boil the potatoes with a little salt and mash them in the traditional way. Mix the purée with the tuna, one of the eggs, parsley and lemon juice. Mix everything together until you get a uniform and slightly compact dough.

Form croquettes with the potato and tuna dough. Then pass them through the beaten egg and breadcrumbs to make the batter. If you want you can make a double batter by repeating this last step.

Fry the tuna croquettes in a saucepan with hot oil until they are completely browned.  Remove on absorbent paper to remove excess oil.

Serve and enjoy the tuna and potato croquettes as an appetizer with a spicy tomato sauce  or with basmati rice and a traditional Caesar salad .
