Ingredients to make truffle eggs:

  • 4 eggs M or L
  • 2 medium potatoes
  • 1 piece of black truffle (to taste)
  • 1 pinch of salt

How to make truffle eggs:

  1. At least three days before preparing the truffle eggs recipe, you must put the eggs with the truffle in a container with a lid.
  2.  As the shell of the egg is so porous, it absorbs the aroma of the truffle and, therefore, the eggs will have a slight taste of this fungus when cooked.
  3.  In addition, in this way the truffle is better preserved. Of course, you should dry the mushrooms every day or every two days with kitchen paper to prevent them from getting too wet.
  4. Tip: if you leave the eggs with the truffle for four or five days, the better. Think that the truffle can be kept like this for about 15 days perfectly.
  5. As we suggest you make truffle eggs with potatoes, when cooking the recipe start by peeling the potatoes and cutting them into rather thin slices.
  6. We have decided to cook them in the oven, but you can make straw potatoes, common French fries or microwave baked potatoes, you choose!
  7. Grease the baking tray with a little oil, place the potato slices on it, add a little more oil and a splash of water (you could use white wine, but we want the main flavor of the dish to be the truffle).
  8.  Bake the potatoes at 180ºC, with heat up and down, for 15-20 minutes or until done.
  9. Place the potatoes on two plates and heat a frying pan with oil. You can make truffle eggs in different ways: cooking fried eggs or making poached eggs.
  10. We have chosen to make them in the pan, but with less oil so that the dish is healthier and the truffle flavor stands out even more.
  11. To cook them like this, heat a splash of olive oil and add the first egg. Cook over medium-high heat until the white is to your liking.
  12. Tip: the amount of oil used is just enough for the egg to cook, about 2 tablespoons of oil.
  13. Place the egg on the potatoes and cook the next one. If necessary, add a little more oil. If your skillet is large, you may be able to cook the eggs two at a time just fine. We have not used salt, but if you want to add a pinch, we advise you to do it when you are cooking the egg.
  14. Grate the black truffle directly on the eggs and that’s it.
