Trout recipe with almond sauce

Ingredients to make Trout with almond sauce:

  • for 4 people
  • 4 trout.
  • 3 tablespoons of lemon juice.
  • salted
  • 8 tablespoons of olive oil.
  • Almond Sauce:
  • 1 clove garlic.
  • 1 glass of white wine.
  • 1 teaspoon of cornmeal
  • 150 grams of filleted almonds.
  • 1 lemon.

How to make Trout with almond sauce:

  1. We clean, empty and wash the trout.
  2. We season them lightly inside and out.
  3. Lightly flour the trout and fry them in oil, take care that they do not break when turning, just that the outside is browned and leaving the inside almost raw
  4. Remove from the pan and put them on a baking tray.
  5. In the same pan where we have fried the trout, we will make the almond sauce, removing most of the oil and leaving about a tablespoon of oil.
  6. In that pan we sautéed the minced garlic
  7. Then we add the cornmeal, sauté and wet with wine and lemon juice
  8. Bring to a boil and add the chopped and previously browned almonds in the oven.
  9. We crush this sauce until it is fine and if necessary we pass through the strainer.
  10. We rectify the point of salt and thickness if necessary.
  11. We put the trout in the oven to finish cooking the inside of the fish.
  12. Remove the trout from the oven and season with the almond sauce.
