Ingredients to make Trout in Gaztelu Sauce:
- 4 trout portion
- for the willow
- 1 onion
- 1 leek
- 2 green bell peppers
- 1 lemon
How to make Trout in Gaztelu Sauce:
- Divide the trout into two parts, the head on one side and the tail on the other, salt and fry in abundant oil, remove them to a ..casserole and squeeze the lemon over the oil from the pan.
- In the same frying pan, add new oil and poach the vegetables over low heat. When they are soft, pour the vegetables over the trout. Finally, we put the casserole on the heat for 3 minutes, stirring continuously so that the flavors mix.
- To present this dish we will take out a white porcelain tray and we will place the pieces of trout in the center garnishing with the sauce around it.
