Ingredients to make Trout in Papaya Sauce:
- 4 trout fillet
- 1 pc. not very ripe papaya
- 1 pc. yellow onion, finely chopped
- 1 cup chopped coriander
- 1/2 cup chopped ginger
- 1 cup red wine
- salted
- Pepper
- flower
- 1 cup white wine
- 1 rosemary branch
How to make Trout in Papaya Sauce:
- The fillet is seasoned with salt and pepper, drizzled in flour and sautéed in a frying pan with a little oil to brown it on both sides, then add the wine and the sprig of rosemary to which it reduces, set aside.
- For the sauce, chop the papaya into cubes, add the onion, cilantro, vinegar, ginger, salt and pepper, mix and place on the fillet.
