Tripe Stew Recipe

Ingredients to make tripe stew:

  • ¾ kg of cooked tripe
  • 50cc of olive oil
  • 1 chopped onion
  • 1 can of diced plum tomatoes
  • 2 bay leaves
  • chopped parsley
  • 3 potatoes, said
  • 2 carrots
  • Vegetable broth as needed
  • Salt
  • pepper-to-taste

How to make tripe stew:

  1. Cut the tripe into strips. In a frying pan with oil brown the onion.
  2. Add the tomatoes, the tripe and continue to heat, stirring well.
  3. Add the bay leaves, season with salt and pepper and add the potatoes, carrots, broth and season to taste.
  4. Let it boil over moderate heat until everything is cooked.
