Ingredients to make traditional roast lamb:

  • 4 garlic cloves
  • 2 tablespoons of pork lard
  • 2 kilograms of Shoulder or Leg of suckling lamb
  • 30 grams of parsley
  • 1 dessert spoon of coarse salt
  • 1 teaspoon of Vinegar
  • 1 glass of white wine

How to make Traditional Roast Lamb:

  1. To make the marinade for our oven-roasted lamb, we begin to macerate the garlic, parsley, coarse salt and lard in a mortar. Crush everything to form a paste.
  2. With this paste, the meat is spread on all sides. When you already have it, place the piece of lamb in a baking dish and bathe with the wine.
  3. The oven must be previously preheated to 220ºC, when it is already very hot, lower the temperature to 180ºC and insert the tray with the lamb. Then cook in the oven for about 1 hour.
  4. Trick: You can add potatoes and chopped onions to accompany our traditional roast lamb as a garnish.
  5. After this time, turn the meat over and continue cooking for another 20-25 minutes. When you see that the meat is golden, add the vinegar on top so that it is crispy and the temperature is raised to 200º C. for 5 minutes.
  6. Serve and enjoy the traditional roast lamb and accompany it with the potato and onion garnish or with a rich Caesar salad. Take advantage
