Traditional Poultry Consommé Recipe

Ingredients to make Traditional Poultry Consommé:

  • 1 hen cut into quarters
  • 2 tomatoes
  • 1 celery
  • Parsley
  • 100 grams minced meat
  • 3 cane and knee bones
  • 1 onion
  • 2 carrots
  • Salt
  • Sherry wine (optional)
  • 1/2 kg of lean beef

How to make Traditional Poultry Consommé:

  1. Boil the beef, minced meat, bones and vegetables with cold water and salt, over low heat for about an hour and a half.
  2. Then turn off the heat and let cool. Then add the chicken and boil again for an hour over very low heat.
  3. Finally we strain the broth and add, optionally, a glass of dry sherry.
