Ingredients to make Traditional Poultry Consommé:
- 1 hen cut into quarters
- 2 tomatoes
- 1 celery
- Parsley
- 100 grams minced meat
- 3 cane and knee bones
- 1 onion
- 2 carrots
- Salt
- Sherry wine (optional)
- 1/2 kg of lean beef
How to make Traditional Poultry Consommé:
- Boil the beef, minced meat, bones and vegetables with cold water and salt, over low heat for about an hour and a half.
- Then turn off the heat and let cool. Then add the chicken and boil again for an hour over very low heat.
- Finally we strain the broth and add, optionally, a glass of dry sherry.
