Traditional Galician chestnut soup recipe

Ingredients to make Galician traditional chestnut soup:

  • 1 glass of olive oil
  • 1 ½ kilo of chestnuts
  • 2 tablespoons of vinegar
  • 1 piece of bacon or pig’s ear
  • Salt
  • 2 onions
  • 1 clove garlic

How to make Galician traditional chestnut soup:

  1. Peel the chestnuts and boil them in plenty of salted water for a few minutes. Drain and peel.
  2. Then they are cut in half to put them in another clean water with salt, a whole onion and a clove of garlic.
  3. Add the piece of bacon or the pig’s ear.
  4. Leave everything for an hour and a half until the chestnuts are cooked, at which point you fry the chopped onion and oil with a little vinegar, which is added to the broth
