Ingredients to make Torreón-style Deviled Shrimp:

  • 1 kilogram of unpeeled raw medium shrimp (only without head)
  • 100 grams of butter
  • 2 units of medium roasted tomatoes (very important ROASTED)
  • 90 grams of chipotle peppers in marinade
  • 2 tablespoons of cooking oil

How to make Torreón-style Deviled Shrimp:

  1. Rinse the shrimp perfectly in 1 liter of water with the juice of a lemon. Put the butter and oil in a large frying pan, when it is completely melted add the previously drained shrimp and lightly fry.
  2. Meanwhile, perfectly blend the tomato with the can of chipotle peppers(it should have a paste-like consistency, not a runny one). Add to shrimp and reduce until shrimp is cooked through.
  3. Avoid overcooking as the shrimp dry out and take on a hard consistency. Add salt and pepper to your liking.
  4. Serve the deviled shrimp accompanied by white rice. The trick to enjoying this dish is to suck on the shrimp with all their shells to enjoy the marinade and then peel and eat them.
