Tomato, mozzarella and anchovy salad recipe

We prepare a tomato salad with mozzarella pearls and anchovies that will be ready in less than 15 minutes and that will save us a healthy and delicious dinner. Ideal to compensate for the excesses of Christmas meals or family gatherings, this salad will help us regain our weight by eating healthy, so you can’t miss it!

Ingredients to make tomato, mozzarella and anchovy salad:

  • 3 ripe tomatoes
  • 125 grams of mozzarella pearls
  • 1 can of anchovies in oil
  • 50 grams of pitted green olives
  • 1 handful of croutons
  • 1 splash of extra virgin olive oil
  • 1 pinch of salt
  • 1 pinch of minced garlic
  • 1 splash of vinegar

How to make Tomato, Mozzarella and Anchovy Salad:

We start by washing and drying the tomatoes. We remove the heart and chop them leaving the skin. Then we put them in a large bowl. Drain the olives and add them to the tomatoes.

We remove the excess oil and salt from the anchovies, cut them into pieces and put them in the salad bowl to continue with the preparation of the tomato and mozzarella salad. Prepare a dressing with olive oil, vinegar, ground garlic and salt. Of course, be careful with the salt that the anchovies and olives already have. We sprinkle our tomato and anchovy salad with the preparation, stir well and let stand for five to 10 minutes so that the tomatoes take the dressing well. Before serving, add the mozzarella pearls and the croutons and serve immediately so the bread doesn’t get mushy. This tomato, mozzarella and anchovy salad is perfect to serve as a starter, dinner or as an accompaniment to other dishes, such as pork ribs baked with garlic and parsley. Bon Appetite!
