Tomato Consommé Recipe

Ingredients to make Tomato Consommé:

  • 1/2 kg of bones
  • 1 onion
  • 1/2 kg of zancarrón
  • 1/2 hen
  • 4 carrots
  • 3 leeks
  • Also
  • 50 grams of tapioca
  • Pepper
  • 4 ripe tomatoes
  • 2 egg yolks
  • Salt

How to make Tomato Consommé:

  1. Prepare a consommé by cooking over low heat for 1.5 hours the zancarrón, the hen, the bones and the vegetables.
  2. Strain it through a cloth before letting it rest to remove the fat.
  3. Meanwhile, peel and remove the seeds from the tomatoes, crushing them raw.
  4. Cook the broth with the tapioca, add the tomato purée and let it boil for a few minutes.
  5. Add the two egg yolks (without diluting them) and stir until they dissolve, keeping the boil until the egg sets.
  6. Season with salt before serving
