Tomato and pepper stew recipe

Ingredients to make Tomato and Pepper Stew:

  • 2 tablespoons olive oil
  • 1 large red onion
  • 2 large red bell peppers, diced
  • 1 large green bell pepper, chopped
  • 4 large ripe tomatoes, peeled and diced
  • 2 teaspoons of brown sugar

How to make Tomato and Pepper Stew:

  1. Heat the oil in a medium saucepan; add the chopped onion and sauté over low heat until tender.
  2. Add the peppers and cook over medium heat for 5 minutes, stir.
  3. Add the tomatoes and sugar.
  4. Lower the heat, cover and cook until the vegetables are tender.
