Tomato and monkfish skewer recipe Carmencita

Ingredients to make Carmencita tomato and monkfish skewer:

  • 4 slices of ripe tomato
  • 1/2 kg. monkfish
  • 2 eggs
  • Salt
  • Oil
  • Garlic

How to make Carmencita tomato and monkfish skewer:

The tomato slices are salted and passed through flour and egg. They fry. The monkfish is cut into thin slices, salted and placed in a mixture of egg, parsley and garlic for 1/2 hour. Afterwards, it is grilled, “round and round”.
