Ingredients to make Tomato and Feta Salad:
- 3 ripe but firm tomatoes
- 200 grams of feta cheese
- 100 grams of pitted green olives
- 1 can of mackerel in oil
- 2 tablespoons grated celery
- 1 handful of salad seeds (sunflower seeds, pumpkin seeds and pine nuts)
- 1 handful of croutons
- 1 splash of extra virgin olive oil
- 1 splash of vinegar
- 1 pinch of salt
- 1 pinch of minced garlic
How to make Tomato Feta Salad:
Wash and dry the tomatoes. Then, we remove the upper part and chop them, leaving the skin. We put them in a wide font. Drain the olives, celery and mackerel, and add them to the salad bowl. Separately, we cut the feta cheese into small cubes and add it to the tomato salad along with a handful of seeds. Prepare a dressing with vinegar, oil, garlic and salt and pour it over the ingredients. Mix well, but gently so as not to destroy the cheese.
Place a handful of croutons on top of the salad so they don’t go mushy before eating. It is important to leave this ingredient for the last step, just before serving.
