Summer is salad time. With the heat you want light, fresh and healthy meals while spending very little time in the kitchen (either preparing food or picking up) so a tomato and anchovy salad with olives and pickled onions is the ideal option for dinner and even to eat on very hot days.
Ingredients to make tomato and anchovy salad:
- 4 Tomatoes
- 90 grams of pitted green olives
- 90 grams of Onions in vinegar
- 1 can of anchovies
- 1 splash of extra virgin olive oil
- 1 pinch of salt
- 1 pinch of basil
How to make Tomato and Anchovy Salad:
The first thing we have to do to prepare this tomato and anchovy salad is to wash the tomatoes and cut them into small cubes. We put them in a salad bowl.
Tip: The best tomatoes are cold so that the salad with anchovies and olives is fresh.
Next, add the olives, the drained onions and the anchovies cut into pieces. If you feel like it, you can make homemade salted anchovies yourself instead of buying them canned. Season the tomato and anchovy salad with a drizzle of olive oil, salt and chopped basil. Mix well and let the anchovy and tomato salad rest for about five minutes so that it is well impregnated with the flavor of the basil, and enjoy!
Tip: If you don’t have fresh basil, in almost all supermarkets they sell jars with dried basil that will come in handy.
