Tlacoyos recipe with beans and nopales

Mexican tlacoyos are a traditional dish of the country, since they combine emblematic ingredients of Mexican culture such as corn dough, beans, and nopales and are also seasoned with a spicy sauce based on red or green chili. In the original recipe for tlacoyos, which is made with corn dough, a kind of thick tortilla is formed, which will be filled with ground or refried beans; then they are closed and grilled, and at the moment of serving they are added a little cooked nopal that accompanies and completes our bean tlacoyos.

Ingredients to make Tlacoyos with beans and nopales:

  • 1 kilogram of corn dough
  • 6 pieces of Nopales
  • 1 piece of onion
  • 1 clove garlic
  • 150 grams of Longaniza
  • 2 cups of ground beans
  • 2 tablespoons of oil
  • 1 pinch of salt

How to make Tlacoyos with beans and nopales:

In the following image you can see the ingredients that we will use to prepare these delicious bean and nopal tlacoyos. We are going to start our preparation by chopping the nopales into small rectangles and once they are ready, we add them to a saucepan with enough water to cover them. This water must be boiling, and we also add a little salt, garlic and onion. We let the nopales cook for approximately 15 minutes. After this time we remove them from the water, and reserve.  On the other hand, in a hot frying pan, fry the sausage. It will be ready when it looks slightly golden.

Once the longaniza is ready, we add the ground beans and integrate these ingredients of the Mexican tlacoyos perfectly so that their flavors complement each other. We let them fry together for 3 minutes and after this time, we remove them from the heat and reserve a moment. On the other hand, we take the corn dough, add a little water to soften it and knead it for a moment until it feels smooth.

Now we take a ball of dough, we make it a little elongated and we begin to press it with our hands in order to form an oval and thick tortilla to make the bean and nopal tlacoyos, like the one we see in the following image. Once our thick tortilla is ready, we take some of the beans with longaniza that we fried a moment ago and fill the tortilla.

Once the tortilla is filled, we seal it. For this we take each of the lateral ends of our tortilla and bring them to the center, trying to unite the dough well. You should see something similar to the following image.

Now once all our bean and nopal tlacoyos are ready, we are going to place them on a hot griddle or Comal so that the dough is cooked, and we turn it from time to time so that everything cooks evenly. Let them cook for 10 minutes. After this time our bean and nopal tlacoyos are READY! We add the nopales that we cooked a moment ago to the top and we can accompany them with the sauce that we like the most. Bon Appetite!
