Tic Beef Pot Recipe
Ingredients to make Olla de carne a la Tic:
- 1/2 pound of yucca
- 1/2 pound sweet potato
- 1/2 pound of tiquizque
- 1/4 pound carrot
- 1/2 pound potatoes
- 1/2 pound of yam
- 1/2 pound seasoning squash
- 1/2 pound malinger
- 1 seasoning chayote
- 1 green banana
- 2 tender seasoned ears of corn
- 8 tender chelates these are the tender corn or what is called corn flower
- 1 roll of coyote coriander or broadleaf coriander
- 1 stick of celery
- 1 sprig of oregano
- 2 tablespoons chicken or beef seasoning powder
- salt to taste
- 2 pounds bone-in beef, cut into bite-size pieces or beef ribs, cut into about 2-inch pieces.
How to make Tic Beef Pot:

In a more or less large pot, cook the meat with the coriander, oregano, celery and salt to taste with enough water to cover the meat and leave it soft.

In another large pot put all the vegetables except the potato, the sweet potato and the squash with a little chicken or beef seasoning a tablespoon of achiote and bring it to a boil add enough water to cover the vegetables when the vegetables are al dente add the meat cooked and the broth then add the potatoes, sweet potato and squash stir everything carefully not to disrupt the vegetables and bring to a boil until the last vegetables are cooked can accompany with hot white rice.
