Souvlaki is a popular dish of Greek cuisine that consists of skewers of seasoned meat pieces that we will replace with textured soybeans, in such a way that we will obtain some wonderful vegan skewers with this step by step that I share. - 2 cups of water (480 milliliters)
- 1 teaspoon of sweet paprika

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon of sugar
- 1 pinch of pepper
- ½ teaspoon Celery powder
- 1 teaspoon lemon zest
- ½ teaspoon dried Basil
- ½ teaspoon dried rosemary
- ¼ glass of vegetable oil
How to make Coarse Textured Soy Skewers:
First, to start this thick textured soy skewers recipe, we soak the textured soy in the warm water or broth for 20 minutes. When the soy doubles in size, drain it well, squeezing with your hands to remove excess liquid. We prepare the dressing to macerate the textured soy. Mix all the spices with the oil in a bowl.
Place the textured soy balls in a container and pour the dressing inside. Mix well so that it is impregnated and let the textured soybeans rest in marinade all night or at least several hours.
After the rest time we take the soy balls and stick them on the sticks for the skewers. As an option, we can alternate them with pieces of vegetables (onion, pepper, carrot, etc.) and thus obtain very tasty vegan kebabs.
