Thick Potato Soup Recipe

Ingredients to make thick potato soup:

  • 300g potatoes
  • Curry
  • a pinch of salt
  • 2 leeks (the white part)
  • Pepper
  • 30ml olive oil
  • Parsley
  • 1 onion

How to make very thick potato soup:

  1. Put just enough water in the pressure cooker to cover the potatoes, peeled and cut into thick slices, as well as the onion and leek stems.
  2. We cook for 15 minutes at maximum pressure, cool and beat everything in the blender.
  3. In a saucepan put 2 tablespoons of oil and add the potato mixture, season with salt, pepper and curry.
  4. Serve hot, garnish with the chopped parsley and finally add the tablespoon of raw oil.
