Thermo Mix Recipe: Prawn Croquettes

Ingredients to make Thermo mix: Prawn croquettes:

  • 250g prawns
  • 800g milk
  • 3 hardboiled eggs
  • 100g butter or margarine
  • 50g oil
  • 30g onion
  • 1 clove garlic
  • 170g flour
  • Nutmeg
  • Pepper
  • Salt
  • 2 fish broths
  • Coriander leaves
  • TO BATTER

  • soft bread
  • 2 cloves of garlic
  • a few sprigs of coriander

How to make Thermo mix: Prawn croquettes:

  • Put the bread, garlic and coriander, grate it at maximum speed for a few seconds. Take out and reserve. 2. Chop the hard-boiled eggs for 3 seconds, speed 3.5. Take out and reserve.
  • Put 300 g of milk, the heads and shells of the prawns. Program 5 minutes, 100º C, speed 4. Strain through a fine strainer and reserve the fumet.
  • Rinse the jar and lid well. Incorporate oil, butter, garlic and onion and program 3 minutes, 100º C, speed 5.
  • Add the flour and program 2 minutes, 90º C, speed 4. Weigh the liquid from the fumet and complete up to 800 g. Milky.
  • Season with salt (or fish broth), nutmeg and pepper. Mix on speed 8 for a few seconds, until smooth.
  • Program 7 minutes, 90º C, speed 2.5. After a few minutes, add the reserved shrimp bodies, the chopped eggs, and the chopped coriander leaves with scissors.
  • When the time is up, rectify the seasoning and mix with the spatula from bottom to top.
  • Put the mixture in a pastry bag or in a bowl. Let it cool. Coat the croquettes in the breadcrumbs, then pass them through the egg and lastly again through the breadcrumbs.
  • Let them rest before frying (remember that to fry them they must be covered in oil).
