Textured soybean recipe with sweet and sour sauce

We are used to seeing sweet and sour sauce on the menus of Chinese restaurants and many of us like the taste of this tomato sauce with a sweet touch. And the best thing is that there is a simple way to prepare it at home. The most famous recipe with this sauce is sweet and sour pork, but to make it healthier we are going to replace the meat with an excellent source of healthy vegetable protein without cholesterol: textured soy.

Ingredients to make textured soybeans with sweet and sour sauce:

  • 1 cup coarse textured soybeans
  • 2 apples
  • 1 carrot
  • ½ can of crushed tomato
  • 5 mushrooms
  • 1 onion
  • 1 piece of fresh ginger
  • 1 tablespoon cornstarch or cornstarch
  • 3 tablespoons of brown sugar
  • 2 tablespoons of oil
  • 2 tablespoons of rice vinegar
  • 1 splash of soy sauce
  • 1 piece of salt

How to make textured soybeans with sweet and sour sauce:

1.Soak the textured soybeans in the warm water or vegetable broth for at least 20 minutes. After soaking, drain the soy well, squeezing with your hands until as much liquid as possible is removed.

2.In a saucepan, prepare the sweet and sour tomato sauce. Heat the saucepan with the crushed tomato, vinegar, soy sauce, salt, sugar and chopped fresh ginger. Cook the sauce, stirring occasionally, over medium heat for 10 minutes. Add the cornstarch, stir well and cook another 5 minutes. Remove the sauce from the heat and reserve.

3.Peel and cut the apple into medium pieces, the carrot into slices and the mushrooms into slices, chop the onion. Heat a frying pan, add the oil and fry the onion. Add the carrot, mushrooms and apple and sauté until the vegetables start to soften.

4.Add the textured soy to the pan, sauté for 2 minutes and add the sweet and sour sauce. Mix well so that the sauce covers all the ingredients well. Cook another 2 minutes soy meat with tomato sauce and remove from heat.

5.Serve textured soy with sweet and sour sauce with rice or vegetables.
