Ingredients to make tender grilled baby squid:
- 1 kilogram of fresh squid
- 2 garlic cloves
- 1 bunch of fresh parsley
- ¼ glass of white wine
- 2 tablespoons olive oil
How to make tender grilled squid:
- When you have fresh squid at home, the first thing you should do is clean them well. Remove the skin, discard the guts, and separate the head from the rest of the body. Then, place the cuttlefish on absorbent paper to completely remove any remaining water and moisture. This part is the most complicated of the entire recipe, so don’t worry. You can save the heads to make a seafood broth.
- Tip: As with most seafood recipes, one of the secrets to making good grilled squid is to use quality products.
- On the other hand, prepare the garlic and parsley dressing that will accompany the grilled squid recipe. To do this, finely chop these two ingredients and mix them in a mortar together with the wine and olive oil.
- Tip: If you don’t want to use wine, you can add a few drops of lemon juice.
- Now, heat a large griddle or frying pan with a little oil, enough so that the seafood does not stick. When you see that it is very hot, add the cuttlefish and cook them for a maximum of two minutes on each side. The idea is that they brown slightly.
- Just before removing the baby squid from the heat, add the garlic and parsley dressing, mix and continue cooking for half a minute more.
- Serve the freshly made grilled squid immediately and enjoy adding a pinch of coarse salt on top. This type of grilled seafood is ideal to serve as an appetizer or as a tapa, sharing a few beers with friends.
