Ingredients to make Tempeh Sandwich:
- 3 slices of whole meal bread
- 2 slices of Tempeh
- 4 leaves of mixed lettuce
- 2 tablespoons fresh coriander
- 5 Cucumber slices
- 2 tablespoons vegetable mayonnaise
- 1 tablespoon alfalfa sprouts
- 1 tablespoon of sesame oil
- 1 teaspoon of rice vinegar
- 2 teaspoons of soy sauce
- ½ teaspoon of brown sugar
How to make Tempeh Sandwich:
First of all, we will start making this tempeh sandwich by preparing the vinaigrette. Marinate the tempeh by mixing the soy sauce, sesame oil, rice vinegar and sugar in a bowl. Stir well to incorporate the ingredients. Put the tempeh slices in the bowl and marinate for half an hour. Next, heat a frying pan and cook the macerated tempeh on both sides until it turns a little brown.
Toast the bread slices and spread them with the vegan mayonnaise. On the bottom slice place several lettuce leaves, the sprouts and the cucumber slices. Place the second slice of bread, the rest of the lettuce, the tempeh and the last slice of bread. Actually, you can stuff any vegetable you like into this vegan veggie sandwich. Cut the tempeh sandwich into 2 triangles and serve it with some baked potatoes with rosemary for example.
