Tapioca recipe with coconut milk

Ingredients to make Tapioca with coconut milk:

  • 100 grams of tapioca pearls
  • 1 liter of water
  • 1 tablespoon ground cinnamon
  • 1 piece of star anise
  • 100 milliliters of evaporated milk
  • 200 milliliters of coconut milk
  • 100 milliliters of coconut cream
  • 50 grams of condensed milk
  • 1 Teaspoon vanilla extract
  • 1 pinch of salt

How to make Tapioca with Coconut Milk:

  1. Do you wonder how tapioca pearls are prepared? Well then, start the recipe for tapioca with coconut milk by heating 1 liter of water in a pot with the tablespoon of ground cinnamon and star anise, heat until it begins to boil.
  2. You can also use cinnamon stick and anise grain. Also, at the end you can strain if you do not want to feel the grains of anise.
  3. When it is boiling, add the tapioca pearls with coconut milk and let it boil for about 10 minutes.
  4. Then, lower the flame to a medium low temperature and move in intervals of 2 to 3 minutes from time to time for 15 minutes.
  5.  Gradually the granulated tapioca will begin to hydrate, become transparent and grow in size.
  6. While the tapioca is cooking, in a bowl mix the evaporated milk, coconut milk, condensed milk, coconut cream, vanilla and a pinch of salt.
  7. Tip: you can use only coconut milk and cream so that the flavor is 100% coconut.
  8. When the 15 minutes of cooking the tapioca have passed, add the milk mixture and cook for another 15 minutes until it has thickened slightly.
  9. Stir constantly, since the milk tends to stick to the bottom and start to burn, this modifies the final flavor, just keep it at a low medium temperature.
  10. Let cool a bit to serve, you can accompany with some nuts or almonds.
