Ingredients to make Enchiladas Tapatias:
- 150 grams of guajillo chili
- 1 medium onion
- 1 clove garlic
- Salt to taste
- corn oil for frying
- 12 medium or 16 small tortillas
- 350 gr. crumbled fresh cheese
To decorate:
- ½ romaine lettuce, thinly sliced
- 150 grams of crumbled fresh cheese
- 1 medium onion thinly sliced and deflated in water.
How to make Tapatia Enchiladas:
The chilies are seeded and deveined and soaked in very hot water for 15 minutes; then they are ground with the onion, garlic and salt; strain and fry in two tablespoons of very hot oil, when it is spicy and well-seasoned, remove from the heat. The tortillas are passed through the sauce and fried one by one in a pan with hot oil. They are filled with cheese, rolled up, placed on a plate and sprinkled with cheese, then the lettuce and finally the well-drained onion wheels. They are served immediately.
Note: Stuffing can also be made from cooked, shredded chicken or pork.
